A Shut Up and Eat Recipe

The following is a recipe I served for dinner this week. It got rave reviews from Tommy the 5-year-old…

“What’s that stench?!”

“Oh My Gawd, that’s gross!”

“Please don’t make me eat this Mommy!”

“I think I’m going to die.”

And finally, after taking a bite, “oh, it tastes like Chinese food.”


Sweet ‘n’  Sour Chicken (from the Taste of Homes, Healthy Cooking magazine)


4 boneless skinless chicken breast halves (4 oz. ea.)

2/3  C water

1/3  C sugar

1/4  C reduced-sodium soy sauce

1/4  C cider vinegar

1 medium sweet red pepper, cut into 1-in pieces

1 medium green pepper, cut into 1-in. pieces

2 Tbsp cornstarch

3 Tbsp cold water

Hot cooked brown rice

1. Place chicken in a baking dish; set aside. In a small saucepan, bring the water, sugar, vinegar and soy sauce to a boil, stirring constantly. Add peppers; return to a boil. combine cornstarch and cold water until smooth; gradually stir into pepper mixture. Bring to a boil; cook and  stir for 1-2 minutes or until thickened. Pour over chicken.

Bake, uncovered, at 350 degrees for 10-13 minutes on each side or until a meat thermometer reaches 170 degrees. Serve with rice

Nutrition: 1 serving (without rice) equals 231 calories, 2 g fat, 66 mg cholesterol, 683 mg sodium, 25 g carbs, 1 g fiber, 28 g protein
